Passover Brisket ~ Recipe

INGREDIENTS:

  • 4-5 lb beef brisket, trimmed of excess fat
  • 2 onions, sliced
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 1/4 cup tomato paste
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Olive oil

INSTRUCTIONS:

  1. Preheat your oven to 350°F (175°C).
  2. Heat a large skillet over medium-high heat. Season the brisket generously with salt and pepper.
  3. Add a drizzle of olive oil to the skillet, and sear the brisket on both sides until browned, about 5-6 minutes per side. Remove the brisket from the skillet and set aside.
  4. Add the sliced onions and minced garlic to the skillet, and sauté until the onions are soft and translucent, about 5-7 minutes.
  5. In a separate bowl, whisk together the beef broth, red wine, tomato paste, honey, Dijon mustard, thyme, and rosemary.
  6. Transfer the sautéed onions and garlic to a large roasting pan. Place the seared brisket on top of the onions.
  7. Pour the broth and wine mixture over the brisket.
  8. Cover the roasting pan tightly with foil, and bake for 3-4 hours, or until the brisket is fork-tender.
  9. Remove the foil, and continue baking for an additional 15-20 minutes to brown the top of the brisket.
  10. Let the brisket rest for 10-15 minutes before slicing. Serve with the onion and pan juices.

Matzo Ball Soup ~  Recipe

INGREDIENTS:

  • 4 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup chicken stock
  • 1 cup matzo meal
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 quarts chicken stock
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Fresh dill, chopped (optional)

INSTRUCTIONS:

  1. In a large mixing bowl, whisk together the eggs, oil, and chicken stock.
  2. Add the matzo meal, salt, and pepper, and stir until just combined.
  3. Cover the bowl and refrigerate for 30 minutes to an hour.
  4. In a large pot, bring the chicken stock to a boil over medium-high heat.
  5. Add the carrots, celery, onion, and garlic, and simmer for about 10 minutes, until the vegetables are tender.
  6. With wet hands, form the matzo mixture into 1-inch balls and drop them into the soup.
  7. Cover the pot and simmer for 20-25 minutes, until the matzo balls are cooked through.
  8. Serve hot, garnished with fresh dill if desired.

Roasted Asparagus with Lemon & Garlic ~  Recipe

INGREDIENTS:

  • 1 lb asparagus, tough ends removed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • Salt and pepper to taste

INSTRUCTIONS:

  1. Preheat the oven to 400°F.
  2. Arrange the asparagus on a baking sheet in a single layer.
  3. Drizzle the olive oil over the asparagus and sprinkle with the garlic, salt, and pepper.
  4. Toss everything together until the asparagus is evenly coated.
  5. Roast for 10-12 minutes, until the asparagus is tender and lightly browned.
  6. Drizzle with the lemon juice and serve immediately.
