Stove Top: Heat 1 tablespoon vegetable oil in a 12-inch skillet over medium-high heat. Add the defrosted shrimp and stir-fry until they're cooked through (3-4 minutes). Remove the shrimp from the skillet. Heat another tablespoon of vegetable oil in the skillet. Add the defrosted vegetables and stir-fry until the they are tender-crisp. Return the shrimp to the skillet and cook until the shrimp and vegetables are hot. Serve over rice if desired.
