Stove Top: Season lamb chops to taste. Heat 1 ½ tablespoons of oil in heavy large skillet over medium heat. Add chops to skillet and cook to desired doneness, about 3 minutes per side for medium-rare and 5 minutes per side for medium. Conventional Oven: Preheat oven to 350 degrees and season lamb chops to taste. Lay the chops on a baking tray and cook in the hot oven for around 20 minutes, turning halfway so they brown evenly, or until cooked to your liking.
